White Chocolate Peanut Butter

You will come to find out that I love white chocolate, so when I saw this recipe at How Sweet It Is, I simply had to try it. And now I am hooked to the stuff, just not sure if that's good or bad!


They say this tastes just like the White Chocolate Wonderful that you can buy from Peanut Butter & Company. I have not tried theirs, but why not make it at home, it is super easy to make!

I just made my second batch, it is nice to have on hand for a quick sweet and salty snack. I like it by the spoonful but its great on ice cream, waffles, toast, pretzels, fruit, or just about anything.

White Chocolate Peanut Butter
makes about 3/4 cup
1 1/2 cups dry roasted peanuts, (salted or lightly salted)
1 teaspoon vanilla extract
1 1/2 Tablespoons canola oil, (you may use less)
1/3 cup white chocolate chips/chunks/bars, melted

Add peanuts to a food processor, and blend until a thick not butter forms. Stream in oil and vanilla with the processor on, continuing to run it until the mixture is smooth(this could take up to 4 minutes). Turn off processor and add white chocolate. Turn processor back on and blend until smooth.

This can be left unrefrigerated for about a week. If it is not gone by then, refrigeration is recommended.
